The Institut National des Appellations d'Origin (INAO) defines each appellation or region in France according to its particular character of wine. This AOC system is based on the concept Terroir, which refers to the unique combination of natural factors associated with any particular vineyard or region, such as soil, underlying rock, altitude, slope of terrain, orientation toward the sun, and microclimate.
